Amy’s Pineapple Tart

Amy was an old friend of the family who passed away a few years ago. She joined us for many special occasions like Christmas, birthdays and other celebrations. She was a fabulous baker, whipping up feasts of cakes and cookies for visitors who might happen to drop by.

This Pineapple Tart is just one of many recipes belonging to Amy and has been used by Tony on the menu many times. A true Queensland dish, delicious after a summer dinner party.

PASTRY

INGREDIENTS

  • ½ cup self raising flour
  • ½ cup plain flour
  • pinch salt
  • 2 tablespoons cornflour
  • 3oz butter

METHOD

  1. mix all ingredients together till like fine breadcrumbs
  2. add 2 tablespoons sugar
  3. beat one egg, 1 ½ tbl/spoons milk vanilla
  4. mix to a soft dough
  5. line tart shell

FILLING

  1. bring to boil 1 tin crushed pineapple
  2. thicken with a little custard powder
  3. pour into pastry shell

TOPPING

  1. mix 1 cup coconut, 1 cup sugar, 1 egg, dessertspoon butter
  2. sprinkle over filling
  3. bake in moderate oven till golden
