Apple and Date French Toast

It’s another lazy breakfast made on the sandwich press! This is a sweet, delicious apple & date gluten free french toast topped with chocolate chips, cacao nibs, honey and coconut yoghurt.

Ingredients

  • 2 pieces of bread (I’ve used burgen gluten free white bread)
  • 1 x egg
  • 1/4 cup almond milk
  • 1 heaped tablespoon of coconut sugar
  • 2 rings of freshly cut apple
  • 6 dried dates or 3 medjool dates

Method

  • Preheat sandwich press
  • Whisk egg, milk and coconut sugar in a large bowl
  • Move bread around, turning it over and coating it thoroughly in the mixture, soaking through all of the bread
  • Place carefully into sandwich press
  • Top with apple rings & dates cut into pieces
  • Lower lid and allow to cook for 3 – 7 minutes or until apple has softened slightly

Serving Suggestions & Variations

  • Top with chocolate chips while still hot so they melt slightly
  • Serve with coconut yoghurt, frozen berries and honey
  • Add a crunchy element with cacao nibs
  • Sprinkle with cinnamon or icing sugar
  • Use banana, peach, guava or mango instead of apple
