Chicken and Bacon Lasagne

Of course you can make this recipe using regular or gluten free lasagne sheets, or even home made pasta, but for this recipe we tried the new san remo gluten free lasagne sheets. The result was awful the first time as I forgot to put foil over the baking tray (duh!) but the second time was great. The one pictured on this page was the first ever lasagne attempt for Drew and I think its safe to say … success!

Ingredients

  • 1 x packet san remo gluten free lasagne sheets
  • 250 grams chicken mince (or turkey mince)
  • 100 grams diced bacon
  • 1 x large onion, diced
  • 2 x large zucchini, chopped
  • 2 x large carrots, chopped
  • 4 x cloves of garlic (or to taste)
  • 1 tin diced tomatoes or 6 fresh diced tomatoes
  • 1 teaspoon of tomato paste
  • 1 cup of water
  • 1 x 400g tin of red kidney or butter beans

Chicken and Bacon Lasagne – Preparation Steps

Method

  • Cook onion, garlic and chopped vegetables in a non-stick pre-heated pan with some olive oil
  • Add bacon, then mince. Cook until sealed.
  • Add tin of tomatoes, beans, tomato paste and water
  • Layer into a baking dish mince, cheese sauce (or just grated cheese if you prefer) and lasagne sheets making sure the sheets come to the edge of the tray. Start
  • Cover with foil and bake for 45 minutes in a moderate oven
