The word meringue puts the fear into most of us but this recipe is almost foolproof. Remember that any failure can be crushed over ice cream or set into chocolate!!
- 2 egg whites, remember with meringue there can be no yolk in the whites at all
- 1 1/2 cups coconut
- 1 cup icing sugar
- Beat egg whites till stiff, add sugar gradually and beat till thick
- Stir in coconut and a few drops of vanilla
- Place spoonfuls onto well greased trays
- Bake in moderate oven till golden
