Green Bean and Coriander Salsa

So, maybe it’s cheating to call this a recipe. It’s just a really light, fresh salsa which I whip up to have with a mexican meal and it looks all pretty in a photo so here it is …


  • 1 x small yellow capsicum (peppers)
  • 1 x medium tomato
  • 20 x green beans
  • 1 x medium cucumber
  • Leaves from 5 x coriander (cilantro) stalks
  • 1 x teaspoon paprika
  • 1 x tablespoon olive oil
  • 1 x tablespoon white vinegar


  • Chop all ingredients into small squares where possible
  • Toss in a large bowl with olive oil, vinegar and paprika
  • Serve as a side with mexican dishes, or spoon on almost any type of grilled fish or pork.
