Mixed Berry Coulis

Coulis is basically a fancy french way to say sauce, it is simply a thin puree of fruit or vegetables. It originally only referred to meat but is now used to define many variations including fruit and vegetable sauces. This uses frozen mixed berries but you can use any berry which you have fresh and in season locally.  This method gives the coulis a lovely shiny sheen.


  • 250 gm fresh or frozen berries
  • 75 gm castor sugar
  • 50 ml water
  • 25 gm arrowroot or cornflour
  • extra 25 ml water


  • place berries, castor sugar and water in pan
  • bring to boil gently
  • mix arrowroot/cornflour with extra water
  • pour into berries quickly whist stirring
  • check consistency, you may need to use more cornflour and water
  • blend then pass through a fine seive, using the back of a spoon or ladle to push through
  • serve as desired
