Mushroom & Spinach Breakfast Fry

Mushrooms are the only food which I don’t like. The taste. The texture. The smell. Ugh. But my partner loves them, so occasionally I cook him up a Sunday morning treat after a visit to the farmers markets. This one is simple, healthy and spicy with whole chilli to give a real kick.

Ingredients

  • 5 medium mushrooms per person
  • 2 leaves of kale or a handful of baby spinach
  • 1 chilli, cut into large pieces (or use a few extra types of chilli and peppers as pictured above)
  • 1  clove garlic, diced
  • 2 tablespoons olive oil
  • Optional: 1 small onion, 1 small capsicum

Method

  • Slice all ingredients into a similar shape
  • Add chilli, garlic, onion, olive oil to pan first cooking until you can smell them
  • Stir through mushrooms and cook for about 3-5 minutes
  • Stir through Kale and turn off heat, leave to sit for a few minutes before serving with or without toast
