Orange Pancakes

A light and thin pancake recipe with your morning gloss of OJ cooked right in!

INGREDIENTS

  • ½ cup self raising flour
  • pinch salt
  • 1 egg
  • ¾ cup milk
  • 3 tbl/spoons softened butter
  • 2 tbl/spoons icing sugar
  • grated rind of one orange
  • ½ cup orange juice

METHOD

  1. Sift flour & salt into bowl
  2. add lightly beaten egg & milk
  3. mix to smooth batter
  4. stand one hour
  5. grease hot pan well
  6. pour in a little batter
  7. cook one minute turn cook other side
  8. repeat with remaining batter
  9. cool
  10. cream icing sugar, butter & rind
  11. spread over cooled pancakes
  12. roll up and place in pan
  13. add juice, heat till boils
  14. baste and serve with ice cream
