A light and thin pancake recipe with your morning gloss of OJ cooked right in!
INGREDIENTS
- ½ cup self raising flour
- pinch salt
- 1 egg
- ¾ cup milk
- 3 tbl/spoons softened butter
- 2 tbl/spoons icing sugar
- grated rind of one orange
- ½ cup orange juice
METHOD
- Sift flour & salt into bowl
- add lightly beaten egg & milk
- mix to smooth batter
- stand one hour
- grease hot pan well
- pour in a little batter
- cook one minute turn cook other side
- repeat with remaining batter
- cool
- cream icing sugar, butter & rind
- spread over cooled pancakes
- roll up and place in pan
- add juice, heat till boils
- baste and serve with ice cream
