Powder Puffs
This is not their true culinary name but when Nana made them, her children thought they looked like her powder puff that she applied her make up with, they were called Powder Puffs from then on. A light and fluffy little cake filled with cream.
Ingredients
- 125 gm butter
- 110 gm castor sugar
- 1 egg
- 50 gm Plain flour
- 35 gm S.R. flour
- 100 gm cornflour
- 35 gm custard powder
Vienna Cream filling
- 60 gm butter
- 120 gm icing sugar
- 2 teaspoons milk
Method
- Beat butter and sugar in small bowl with an electric mixer till smooth and creamy
- Add the egg and beat only till combined
- Stir in sifted dry ingrdients in two batches
- Spoon mixture into a piping bag with a 1cm tube
- Pipe 3cm diameter rounds onto greased trays, leave room for spreading
- Bake in two batches in a moderately hot oven for 10 minutes or until lightly browned
- Loosen biscuits and cool on trays
- When join with Vienna Cream then dust tops with icing sugar
Vienna Cream
- Beat butter till it is as white as possible
- Gradually beat in half the sifted icing sugar then the milk, then the remaining icing sugar
